As a great bonus we seize the opportunity to test new flavors on our breakfasts; last week Stina treated us with these delicious vegan meringues, Chickpea liquid (aquafaba) replaces the egg white!

Whip the liquid from a package chickpeas until only foam remains. Stir in sugar, lemon and vanilla sugar. Whisk for a long while until it looks like whipped egg whites and bowl can be turned upside-down. Click the bite-sized meringues on a plate, then put into the oven, 100 degrees Celsius, and bake for around 1.5 hours. Then turn off the oven and leave the meringues until both the oven and the sheet has cooled completely, it takes about 2 hours.
